Question by Stephanie F: I need an alternate idea for cooking ribeye steaks?
I have two large left over uncooked ribeye steaks from the other day and we wanted to use them tonight, but I don’t want to eat them in traditional steak form. They were really good the other day, so I don’t want to cheapen them, but I also don’t want to freeze them (I never remember to thaw things out). Does anyone have any recipe ideas that don’t require a ton of time?

Here is a recipe for Ribeye and peppers I found on http://www.recipezaar.com – I am including the link just in case you want more than this one!

Ingredients
1 tablespoon vegetable oil
4 (10 ounce) rib eye steaks
1 red bell pepper , chopped
1 green bell pepper , chopped
1 onion , sliced
4 garlic cloves , minced
3 tablespoons fajita seasoning mix
1 lime, juice of
Directions
1Heat the oil in a large skillet over high heat. Sear the steaks on both sides and set aside. In the same skillet over medium heat, saute the red bell pepper, green bell pepper, onion and garlic for 5 minutes, or to desired tenderness.
2Sprinkle the steaks with the fajita seasoning and place them back in the skillet. Squeeze the lime juice over the steaks and bell peppers, reduce heat to low, cover and simmer for 30 minutes to 1 hour, turning steaks over occasionally. (Note: The longer it simmers, the more tender the meat gets.).

How about steak salads, steak tacos, steak burritos, steak taco salad, philly cheesesteak sandwiches?
Just panfry your steaks in butter and oil, or broil them to use them in any of those recipes. Let them rest for 20 minutes before you cut into them, though, or you’ll lose all the juiciness.
I am not sure how you cooked them the other day, but the only way to cook a Rib Eye is on the BBQ medium rare. But, if you want try to make a sauce to pour over them? Mushroom or even a Bernese? Steam up some asparagus or Broccoli.
Now i am getting hungry!
